Tsuchida Shuzo brings you a complex and robust sake using traditional natural brewing techniques while using a common table rice milled to only 90% which allows so much flavor from the rice grain to shine. By using the bodaimoto and yamahai brewing methods, natural lactic acid is borne into the fermentation. Tsuchida also utilizes ambient yeast in the brewery to bring us a very natural sake with no additives - only rice, water and koji.
Meat Lovers Only was developed in collaboration with a Tokyo chef who specializes in premium beef. This sake is rich and robust and when warmed (recommend "jokan" 113 F) rich flavors of nutmeg, cloves, molasses, cinnamon, caramel and soy sauce come out. The bold umami flavor profile and higher acidity synergizes with the meat proteins to enhance the flavors of sake and meat.
