This Ki Yamashiroya Limited Edition Junmai Daiginjo Kimoto uses the best koshitanrei sake rice milled to 30%. Brewed using the kimoto method to produce a robust, yet elegant umami taste with a refreshingly smooth and clean “kire” finish. A clean Niigata style with medium sweetness, and a smooth, milky, refreshing profile with hints of citrus. The sake has been aged for over 3 years at -5⁰C and represents the ultimate in taste.
