Koshimeijo Sake Brewery has origins dating back to 1845 and is located in the small village of Tochio which was annexed into Nagaoka City in Niigata in 2006.  Tochio is located in a fan-shaped basin surrounded by mountains on all sides along with the flow of the Kariyata River.  Due to monsoonal moisture from the Sea of Japan, heavy snow falls, and Tochio is one of the snowiest villages in Niigata where three meters of snow may accumulate in winter.  This climate helps maintain a constant cool temperature in the brewery creating one of the best conditions for brewing sake.

Koshimeijo cherishes the traditional recipes and cold preparation methods of our previous generations.  Although it takes a lot of time and effort, Koshimeijo desires to continue the current handmade brewing methods of its founders.

We present one of Koshimeijo’s premium lines called Yamashiroya, which is one of their top selling brands that highlights the traditional kimoto method of brewing sake using some of the top sake rice produced in Niigata.  Jizake Quest is proud to represent the premium Yamashiroya Junmai Daiginjo Kimoto line in three styles.  The First Class sake presents a unique blend of three premium sake rices from Niigata milled to 40%; the Special Class is an elegant presentation of the special kimoto style with rice milled to 30% for an ultra-premium sake.  The highlight is the Ki Yamashiroya Limited Edition Junmai Daiginjo Kimoto for that special occasion that requires a special sake.
